Pazo Restaurant: Distinct and Upscale in Baltimore

Opened in 2004, Pazo Restaurant was a much-awaited facility and continues to be in high demand among Baltimore diners. Operated by Tony and Cindy Wolf, locally-renowned restaurateurs who also own Charleston Restaurant and Petit Louis Bistro, Pazo features an upscale-yet-relaxed atmosphere that is perfect for dinner dates, family get-togethers and the business lunch crowd (Pazo offers a full service audio/video-equipped private dining room).

Executive chef Micael Costa describes the Pazo's culinary concept to be "rustic, hedonistic food inspired by the regional traditions of old Catalonia, Southern Italy, Sardinia and the Spanish Islands." The ambiance at Pazo is as graceful and timeless as the menu. 

Start your Pazo experience by ordering once of the establishment's tasty tapas. The Butifarra Blanca, a Catalan-style homemade sausage and brown butter potato puree; Pork confit canneloni with mushroom cream and roasted walnuts; crispy calamari with lime salt, chili, and cilantro aioli; white anchovies in first-press olive oil and Ceviche with scallops, tuna, shrimp and crisp tortillas all make great choices.

Hearty appetites will enjoy Pazo's big plates. Frequenter favorites include the wood-grilled tuna with aromatic peppercorn, potato puree and caramelized cauliflower, Black Angus tenderloin medallions with blue cheese butter and brown butter potato puree, and wood grilled lamb chops with manchego croquetas, samfaina and aged sheep's milk cheese.

Pazo also offers a large offering of imported wines and beer. Your server will be able to assist you in pairing the appropriate beverage with your meal choice.
